Chef Bocciarelli always knew that his place would be behind the stove to cook more daring recipes than the others. He took his first steps with 5 star hotels like Eden Roc hotel on the French Riviera and after that 12 years the famous Maison de Truffes. At the end of this experience, he developed a passion for this rare and refined product, and created his own brand around the Truffle ten years ago. Truffles
Truffles are one of the most expensive specialty foods in the world hence their nickname Black Diamonds. The precious black truffle (tuber melanosporum) known as Périgord is harvested a few centimetres deep from mid-November to mid-March. The Precious Black Truffle (tuber uncinatum) known as Burgundy is harvested almost on the soil surface from October 1st to December 31st. The White Truffle (tuber magnatum pico) known as Alba is harvested to a depth of 80 cm from October 1st to December 31st. The summer truffle (tuber aestivum) is harvested almost on the soil surface from May 1st to October 31st.
